Keto Retreat to Costa Rica

Hi Friends! Do you want to come on an adventure of a lifetime with me?

Join me in Costa Rica in January! Not only will you leave inspired to change your life, you will also enjoy beautiful beaches, waterfalls, hot springs and more ❤️

Come on a health retreat of a lifetime where we will dine together and make friends for life while we explore the most beautiful areas of Costa Rica!

Here is a photo of my keto retreat in Bali. Can you believe that most of us didn’t know each other before the retreat started (many people came alone, as did I) and we all still chat just about daily!

And this photo is from my Keto Retreat to Italy. Again, most of us didn’t know each other before the retreat and many came alone, yet we all stay in contact!

Some of my closest friends have come on my keto retreats. It is hard for me to make friends; I am a busy working mom who homeschools the boys, works with celebrities and is often writing books. But when I set my mode to relaxation and let Giuliana take care of the plans, it is the BEST!

I never thought I would love a planned trip because I am very independent; however, it is the most AMAZING way to travel! All you have to do is get on a plane and when you arrive, a driver is there to pick you up to take you to the most beautiful hotel. You do not need to research tickets to anything, no transportation needs to be planned, no hotel needs to be booked. It is all set for you so you can relax and enjoy making friends for life!

No matter if you are keto or not, there’s NO JUDGING on any of my keto retreats. If you do not want to eat keto, no one will mind, however, if you want to eat keto or carnivore, you will have the opportunity to have the most delicious keto food!

Many people on my past keto retreats brought friends who were not keto and we had so much fun! As long as you come with the attitude to have a great time and make new friends, you are invited!

Hurry! This trip will sell out FAST!

Go HERE to check it out!

I hope you can come!

Doesn’t Vito look AMAZING???? In only 6 months he transformed his health 💪

Vito is a chef in Canada and the first photo is from my keto retreat to Greece last fall. His after photo is from my keto Bali retreat!

He still makes delicious food, he’s still a “foodie” but he modifies his recipes to be keto! He is the one who showed my how to make protein noodles with gelatin, water and dried egg whites! He even made squid ink pasta with it!

Fresh Peach Mango Salsa easily made in just minutes with only few simple ingredients that makes the perfect topping for tacos, grilled chicken or fish and makes a delicious appetizer served with tortilla chips!

You guys, THIS peach mango salsa recipe needs to be on your summer menu weekly!  Juicy, sweet, a little spicy and tastes good with just about everything.  A good salsa recipe is absolutely essential to have in your arsenal and I just love a zesty salsa with fresh fruit!  This particular recipe has been on my blog since 2012, but really needed some fresh updated photos and a good boost of flavor.  I hope you all love this new and improved recipe!

Why You’ll Love this Peach Mango Salsa

  • SO colorful and beautiful to serve! 🌈
  • This salsa is sweet, a little spicy and tastes even better the next day.
  • Zero cooking involved and comes together in just minutes.
  • Tastes amazing on top of tacos, grilled chicken or fish and makes a delicious appetizer served with tortilla chips.
  • Easily customizable to your liking so feel free to use whatever fruit you like best!

Fresh Peach Mango Salsa easily made in just minutes with only few simple ingredients that makes the perfect topping for tacos, grilled chicken or fish and makes a delicious appetizer served with tortilla chips!

Ingredients You’ll Need

  • peaches – fresh peaches are best and you can choose to leave the skin on or peel them
  • mangos – just like with the peaches, we want to stick with using a fresh mango, make sure it’s nice and ripe so that it’s not too hard to cut
  • tomatoes – I used grape tomatoes in this salsa as they chop easily without being too juicy, but you could use Roma or plum tomatoes, you’ll just want to remove the inner pulp and seeds to get rid of that extra juice
  • red onion – adds some zest to this salsa as well as a lot of flavor and nice crunch
  • red bell pepper – this adds a nice crunch to the salsa and you can use any color bell pepper you’d like
  • jalapeño pepper – adds a kick of spice!  Feel free to use 2 jalapeno peppers if you want a more spicy salsa or omit the pepper altogether
  • cilantro – just goes so well with all the flavors in this salsa and adds a pop of color as well
  • limes – you’ll need the juice of 1 lime and definitely make sure to use fresh lime juice, not the bottled stuff at that can taste bitter
  • honey – adds a touch of sweetness, but feel free to leave this out completely if you’re vegan or don’t want the extra sugar
  • salt/pepper – brings all the flavors together!

How to Make Peach Mango Salsa

This mango peach salsa recipe is seriously SO easy to make, the only time consuming part is all of the chopping.  Once everything is chopped, simply add your peaches, mango, tomatoes, onion, bell pepper, jalapeño, and fresh cilantro in a large mixing bowl and toss with lime juice and honey.  Season with salt and pepper and chill in the fridge before serving so that all the flavors can marinate.  Feel free to taste and season with additional salt/pepper or extra lime, as needed.  You could also add in some lime zest for am extra zip of flavor!

Fresh Peach Mango Salsa easily made in just minutes with only few simple ingredients that makes the perfect topping for tacos, grilled chicken or fish and makes a delicious appetizer served with tortilla chips!

Prepping and Storage

Leftover salsa should stay fresh in your fridge for about 2 to 3 days stored in a sealed airtight container or jar.  The fruit starts to get mushy after a few days so make sure to gobble this right up!

How to Serve Peach Mango Salsa

  • Serve with tortilla chips for a delicious appetizer or snack.
  • Use as a topping on grilled chicken, fish or steak.
  • Spoon it on top of tacos, fajitas or burrito bowls or serve as a side dish. So good on fish tacos!
  • Mix it in guacamole for more texture and flavor.
  • Enjoy with a margarita! 😉

When is ‘Barbie’ available to stream?

“Barbie” has taken the summer — and the box office — by storm.

The movie, directed by Greta Gerwig, brought in $155 million during its first weekend at the box office, marking the biggest opening weekend in history for a female-directed film.

And while theater-goers have made a party out of heading to cinemas clad in pink and sparkles, imitating the doll’s signature style, some folks are jazzing to watch “Barbie” from home.

Here’s what to know.

How to watch the 2023 “Barbie” movie at home (eventually)

Warner Bros. Discovery CEO David Zaslav had good news to share this week: “Barbie” will indeed be available on the streaming service Max. As for when, he said it could be the fall.

However, he isn’t rushing the film out of theaters.

“We really believe in the motion picture window — let it play out … go into PVOD, take it through the windows that have worked forever (in the business),” he said according to Deadline. “When it goes on Max, it will have a good impact in the fall.”

“PVOD” stands for premium video on demand.

While a streaming release date has not yet been announced, “Barbie” is currently available for preorder from Amazon Prime Video. Those who preorder will get the movie as soon as it’s available.

According to Deadline, “Barbie” will be available to watch on airlines in September.

“Barbie” continues to be a box office juggernaut. The movie is currently projected to soon hit the $1 billion mark worldwide.

Kate Middleton’s Brother James Admits His Business Is Failing – SheKnows

Earlier this year, Kate Middleton’s parents, Carole and Michael Middleton, made headlines after their Party Pieces business went bankrupt and left many creditors holding the bill. Now, Kate’s younger brother, James, seems to be having challenging financial times with his dog food company, Ella & Co.

The freeze-dried organic dog food was launched in May 2020 and saw over $431,000 in sales, but by last year, the company was down to just $119,000 in assets. That’s a huge drop in business, but the high-end pet food might be a casualty of the cost-of-living crisis in the U.K. “I’m in a business that I love,” James told the Daily Mail while reassuring them that he’s not concerned about the current state of his company. Yet the entrepreneur doesn’t have the best history when it comes to running a business.

He originally started his career with a cake-making business that provided baking kits that would allow people to make bakery-style creations in their own home. He partnered up with his parents’ Party Pieces company for distribution, but the venture was short-lived and folded in 2015. He then moved on to Boomf, a personalized marshmallow and greeting card business (weird, right?), but the company bounced in and out of debt until it went into bankruptcy in 2021 while still owing his creditors over $1 million.

The Middletons have faced a string of bad luck when it comes to their businesses this year, and they’ve been criticized by anti-royalists for leaving so many business unpaid in the wake of their closure. James seems to still have faith in his dog food business, but unless profits turn around quickly, he may be facing another failed venture.

No-Churn Blue Moon Ice Cream

Have you ever had Blue Moon Ice Cream? Or is it a midwestern ice cream?

When I was a little girl I adored going to our little town of Medford Wisconsin and enjoying the 4th of July events along a cute river. Every year I would get a huge cone filled with Blue Moon Ice Cream. The Fourth of July was the only time I could get Blue Moon Ice Cream so on that day I savored every bite!

I had no idea what was in the delicious flavor of Blue Moon Ice Cream. It may have been the bright blue color that attracted me to the flavor, as well as the fact that my mom thought the flavor was disturbing and told me not to order it; so I did. Even at a young age, I would do the opposite of what I was told to do!

HOW TO MAKE NO-CHURN BLUE MOON ICE CREAM

To make my no-churn keto ice cream, I used Further Food gelatin. Gelatin helps make a soft keto ice cream with a great texture!

I always stock my pantry with Further Food gelatin and collagen! They have so many different flavors of collagen that really make my recipes extra delicious! I seriously use Further Food in most of my recipes!

My container of Further Food gelatin is so huge, I can make gallons of my healthy no-churn keto blue moon ice cream with it!

  • Pour the cream into a blender, or put it in a large bowl and use an immersion blender, and blend until stiff peaks form.(Alternatively, you can whip the cream in a chilled bowl with a chilled hand mixer.) Transfer to a large bowl, if needed.

  • Place the allulose, coconut milk, gelatin, extracts, salt, and food coloring, if using, in another bowl and stir well. Gently fold the almond milk mixture into the whipped cream. Taste and adjust the sweetness to your liking. Place in the freezer to chill for at least 2 hours.

  • Store in an airtight container in the freezer for up to a month.

Homemade Tzatziki Sauce – Eat Yourself Skinny

Fresh and flavorful Homemade Tzatziki Sauce is a creamy yogurt-based sauce perfect for the summer served with kabobs, grilled veggies, pita bread and more!  This recipe is easily made in just 5 minutes with a few simple ingredients!

Fresh and flavorful Homemade Tzatziki Sauce is a creamy yogurt-based sauce perfect for the summer served with kabobs, grilled veggies, pita bread and more!  This recipe is easily made in just 5 minutes with a few simple ingredients!

I absolutely love a creamy tzatziki sauce and this one only takes 5 minutes to make!  This recipe is made with a mixture of full-fat plain Greek yogurt, shredded cucumber, olive oil, lemon juice, garlic and fresh herbs and pairs perfectly with Greek or Mediterranean dishes.  This Greek yogurt sauce is cool, refreshing and is a great way to balance out spicier dishes.  A delicious summer staple that tastes great served with so many things!

Why You’ll Love this Recipe

  • Cool, refreshing and super simple to throw together.
  • Only 6 ingredients and easily made in just 5 minutes!
  • Perfect addition to your your favorite Mediterranean dishes.
  • Delicious summer staple!

Fresh and flavorful Homemade Tzatziki Sauce is a creamy yogurt-based sauce perfect for the summer served with kabobs, grilled veggies, pita bread and more!  This recipe is easily made in just 5 minutes with a few simple ingredients!

Ingredients You’ll Need

  • Greek yogurt – plain full-fat Greek yogurt is what you want to use in this recipe or you could even use sour cream as a replacement for the yogurt.
  • cucumbers – I like to use English cucumbers as they are crisp and seedless, but you could also use mini cucumbers.  I also like to leave the skin on the cucumbers when grating them to get those extra nutrients and fiber.  If you are using regular cucumbers, just make sure to scoop the seeds out before grating them.
  • olive oil – I like to use a good extra virgin olive oil that doesn’t have to be expensive, just make sure it’s cold-pressed and organic for the most flavor (in my opinion).
  • lemons + zest – I just love the bright, zingy flavor the lemon juice and lemon zest brings to this tzatziki dip!
  • garlic – you can use fresh chopped garlic or minced garlic cloves from the jar.
  • fresh herbs – I used a combination of fresh dill and fresh parsley, but you could also add some fresh mint for even more flavor.
  • salt + pepper

How to Make Tzatziki Sauce

The best part of making this Greek tzatziki recipe is that it comes together in just 5 minutes!  Here’s how to make it in just 3 simple steps.

  1. Grate the cucumber.  No need to peel your cucumber, just start grating it on a large box grater.  If using a regular cucumber, make sure to scoop the seeds out before grating.
  2. Squeeze out the water.  Using a kitchen towel, paper towels or a fine-mesh sieve, squeeze out as much liquid from the grated cucumber as you can to get all that excess moisture out and prevent the tzatziki sauce from becoming too watery.
  3. Mix everything together!  In a medium bowl, stir together the Greek yogurt, grated cucumber, olive oil, lemon juice, lemon zest, garlic, fresh herbs and season with salt and pepper, to taste.  Chill the Greek tzatziki sauce in the fridge until ready to serve!

Prepping and Storing

This homemade tzatziki sauce recipe will last in the refrigerator in a sealed, airtight container for about 3 days, but I definitely suggest using it within the first day or two for the freshest taste.

This Tomato, Cucumber and Chickpea Salad is a delicious summer staple made with fresh tomatoes, crisp cucumbers, chickpeas, red onion, and green bell pepper all tossed with a bright lemon vinaigrette!  Easy, healthy and the perfect side dish with grilled chicken, fish or steak!

I am ALL about tomatoes in the summer and this tomato, cucumber and chickpea salad is one of my favorites for summer entertaining!  I literally make this almost every time we have people over to grill out at our house because it is always such a big hit.  Not only does it look so pretty and vibrant on the table, but it also tastes amazing.  All you need are a few simple ingredients to throw this together so it’s a quick and easy side dish when you don’t have a lot of time.  I mean there is nothing more refreshing on a hot summer day than crisp cold veggies that you can feel good about eating because it’s low in calories, packed with protein and fiber, and full of so much flavor.

Why You’ll Love this Salad

  • This salad is light, fresh and healthy!
  • Super simple to throw together with minimal ingredients that are probably already in your fridge or pantry.
  • Can easily be prepped ahead of time for quick assembly and meal prep.
  • Perfect salad to feed a crowd.
  • Zero cooking required!

Ingredients You’ll Need

  • tomatoes – I like to use grape tomatoes (or you could use cherry tomatoes) in this salad because they aren’t as watery as larger tomatoes tend to be when you slice them.
  • cucumber – I like to use English cucumbers as they are seedless and tend to be less watery and more crunchy than regular cucumbers, but mini cucumbers work great too.
  • chickpeas – I used canned chickpeas (aka garbanzo beans) which are a great source of protein in this salad, just make sure to drain and rinse the chickpeas.
  • bell pepper – I used a green bell pepper, but any color bell pepper will work in this salad.
  • red onion – adds a nice savory flavor to this salad as well as a good crunch!
  • lemony dressing – simple and delicious mixture of extra virgin olive oil, red wine vinegar, lemon juice, garlic, cumin, and salt.  A little dijon mustard added to the dressing is also a great addition and adds a little zip!

How to Make Tomato, Cucumber and Chickpea Salad

  1. Chop veggies and herbs.  This might be the most time-consuming part, but trust me this salad is worth it!  Slice your tomatoes, cucumbers, green bell pepper, red onion, and fresh parsley and add them to a large bowl along with the chickpeas.
  2. Make the dressing.  In a small bowl or mason jar, whisk together the olive oil, red wine vinegar, lemon juice, garlic and cumin and mix or shake until dressing is emulsified.
  3. Toss the salad.  Pour the dressing on top of the salad and toss everything together until all the veggies are nicely coated.  Let the salad sit for about 10 minutes (or up to an hour) to allow the veggies to soak up all that delicious flavor!  Taste and season with additional salt and pepper, as needed, and enjoy!

What to Serve with Tomato, Cucumber and Chickpea Salad

The great thing about this chickpea tomato salad is that it can be served with a whole variety of dishes!  Here are some of my favorite ways to serve up this salad:

  • Mix in a protein such as chicken, shrimp or steak and serve it as a main dish.  You could even whip up some extra dressing and marinate the chicken in it (highly recommend this!)  This salad is one of my favorite side dishes when grilling in the summer or when packing for a picnic or potluck!
  • Serve alongside these chicken kabobs or these Mediterranean meatballs.
  • Make it creamy with some chopped avocado or crumbled feta cheese.
  • Throw this Greek salad in a wrap or gyro and drizzle with some tzatziki sauce.
  • Perfect side dish to pizza, soups, warm pita bread or sandwiches.

Prepping and Storage

To Make Ahead:  To prep this salad ahead of time, toss all the veggies together and store them in a separate container from the salad dressing in the fridge to prevent the veggies from getting to soggy, however I do like to allow this salad to marinate for about 30 minutes before serving.

To Store:  This salad can be stored in a sealed, airtight container in the fridge for up to 4 days.

Substitutions and Variations

  • Switch up the protein.  The chickpeas in this salad are a great source of protein, but feel free to throw in some shredded or grilled chicken, shrimp or steak.
  • More veggies.  Add in some additional veggies like chopped zucchini, corn or carrots and you could even add in other fresh herbs such as basil, cilantro, dill or oregano along with the parsley for a different type of flavor.
  • Add some grains.  Toss in some cooked quinoa, farro or rice for a more filling salad and you could even make Mediterranean bowls with this.
  • Other additions.  Make it creamier by adding in some feta cheese, goat cheese or avocado and you can also add in some Kalamata olives for a more Greek flavor.
  • Need some sweetness?  Mix in a little honey or maple syrup in with the dressing before tossing with the salad for a little sweetness.

Cody Rhodes defeats Brock Lesnar, gets his respect

It’s time for the biggest party of WWE’s summer, as SummerSlam 2023 is underway in Detroit.

Eight matches will take place inside Ford Field, home of the Detroit Lions, Saturday, headlined by the long awaited “Tribal Combat” between Roman Reigns and Jey Uso for not only the Undisputed WWE Universal Championship, but to be officially recognized as the Tribal Chief of The Bloodline.

Three other titles will be on the line, including Seth “Freakin” Rollins once again defending the World Heavyweight Championship against Finn Bálor. In other action, Cody Rhodes and Brock Lesnar will face off once more in what could be the end of their months long rivalry.

Follow along with live results and the latest updates from SummerSlam:

Brock Lesnar vs. Cody Rhodes

This match had a main event feel to it, even bigger than the two previous meetings between the two. Rhodes got the action started before the bell even rang, and it was high intensity from the start with Lesnar throwing around Rhodes and Rhodes countering with some signature moves of his own.

Lesnar then took complete control, taking Rhodes to suplex city multiple times and an F5 outside of the ring before another F5 on the announcer’s table. But each time, Rhodes got back into the ring to avoid the count out. “The American Nightmare” finally got on the offensive end, and executed a Cody cutter from the top rope, but Lesnar kicked out.

But in the end, Rhodes was able to land three straight Cody cutters on Lesnar, and in straight fashion, pinned Lesnar for his second win against “The Beast Incarnate.” The surprise came after the match in something you thought you’d never see: Lesnar shook the hand of Rhodes in a sign of respect, hugged him and held his arm in the air as the victor.

Logan Paul vs. Ricochet

In what was dubbed as the “most viral match” of WWE, Logan Paul once again proved how good of a heel he is. Paul started the match in control, all while egging on the crowd to continue booing him. Anytime Ricochet looked to get some sort of momentum, Paul was quick to gain control right back, showing off some power that hasn’t been seen much in his time with the company.

After finally getting in control, Richocet performed a fantastic hurricane neckbreaker, and it was stunning displays of athleticism for the rest of the match from both stars.

What was a great match ended in a dud, as Paul got some brass knuckles from one of his friends. Paul was able to connect with a punch to knock out Ricochet, get the pin and most of all, have Samantha Irvin − Ricochet’s fiancée − announce him as the victor.

When is SummerSlam 2023?

SummerSlam is Saturday, Aug. 5 at 8 p.m. ET.

How to watch SummerSlam 2023

Cody Rhodes has high praise for Brock Lesnar

“The American Nightmare” hasn’t had a shot at the Undisputed WWE Universal Championship since WrestleMania 39, and with a matchup Saturday against Brock Lesnar at SummerSlam, he said he really doesn’t know when he’ll make another push for the title.

It’s the third meeting between Rhodes and Lesnar, with Rhodes winning at Backlash in May and Lesnar winning at Night of Champions weeks later. Beating someone like Lesnar twice puts you in a position where a title shot is the next thing on your mind, Rhodes said.

But it’s easier said than done. Despite their personal feud, Rhodes had high praise for his current rival.

“I think time as it moves on will recognize and realize how dang special Brock Lesnar is in a ring,” Rhodes told USA TODAY Sports. “How special, how almost underplayed it is, the level of expertise that he has in this world.”

Becky Lynch throws shade after match pulled

If there’s one person that isn’t hyped for SummerSlam, it’s Becky Lynch.

Lynch had made it clear to USA TODAY Sports she wanted Trish Stratus at the pay-per-view, and it was looking like the match was going to happen, but it ultimately didn’t make the match card. “The Man” referred to her being left out of SummerSlam in an Instagram post Saturday.

“Making lemonade with all these lemons I’ve been given. What’s everyone else up to this weekend?!” she said.

Warm and delicious Blueberry Lemon Bread Pudding lightened up with healthier ingredients and zero butter or refined sugar!  The perfect cozy dish for breakfast, brunch or dessert!

Growing up my Grandma was known for her out-of-this-world bread pudding and it is still one of my favorites.  This blueberry lemon bread pudding recipe is lower in calories and made much healthier than what I grew up eating, but still has those same warm, cozy flavors we love so much!  Crusty whole wheat bread and gooey blueberries all soaked in a delicious mixture of milk, eggs, maple syrup, lemon, vanilla and cinnamon.  Perfect dish for breakfast, hosting a brunch or even dessert!

Why You’ll Love this Recipe

  • Warm, cozy and delicious!
  • Lightened up with healthier ingredients and zero butter or refined sugar.
  • Can easily be prepped the night before for an easy morning breakfast or brunch!
  • Easy to customize to your liking with fun toppings.

Ingredients You’ll Need

  • bread – for breakfast casseroles like this, I always prefer using a crusty sourdough day old bread because it soaks up the egg mixture perfectly without getting too soggy or mushy when baking.  You could also use a brioche bread, challah or even french bread.
  • blueberries – you can use fresh blueberries or frozen blueberries, just make sure if using frozen you don’t let them thaw first as they won’t hold their shape when baked.
  • lemon zest – brightens up this whole casserole and tastes amazing with the blueberries!  Feel free to add in a tablespoon of lemon juice for even more lemon flavor.
  • applesauce – I used unsweetened applesauce and this helps keep the bread pudding moist.  You could also use plain Greek yogurt in place of the applesauce.
  • milk – I used almond milk, but any type of milk or even heavy cream will work in this recipe.
  • eggs – you’ll need 2 large eggs in this recipe to help bind the bread pudding together.
  • maple syrup – this adds sweetness to the bread pudding without using any refined granulated sugar (you could also use honey) and tastes AMAZING in this casserole!  Feel free to drizzle a little more over top after it has baked.
  • vanilla extract – adds a warm boost of flavor.
  • cinnamon + salt

How to Make Blueberry Lemon Bread Pudding

  1. Slice the bread.  Start by cutting your loaf of crusty bread into 1-inch cubes until you have about 5 cups of cubed bread.  Set aside until ready to use.
  2. Make the custard mixture.  In a large bowl, whisk together the milk, applesauce, eggs, maple syrup, vanilla, lemon zest and salt.  Fold in the cubed bread and the blueberries, mixing well until the bread is completely coated.
  3. Let bread pudding sit.  Allow the bread pudding mixture to sit for about 15 to 20 minutes at room temperature allowing the bread to soak up all that delicious flavor.  Transfer the bread pudding to an 8×8 or 9×9 baking dish coated in cooking spray and either cover and place in the fridge if planning to bake the next morning, or prepare to bake uncovered.
  4. Bake!  Place the bread pudding uncovered in the oven at 350 degrees and bake for 45 to 50 minutes until the dish is set and toothpick inserted in the middle comes out clean.
  5. Serve.  Enjoy the bread pudding warm as is or you could drizzle this with some cream cheese, extra maple syrup, sprinkle on some powdered sugar or enjoy as dessert with a scoop of ice cream or whipped cream!

Prepping and Storage

This lemon blueberry bread pudding can easily be made ahead of time and I always prefer just making it the night before I’m planning on baking it.  Simply follow the instructions right up until baking it, cover and place in the fridge until ready to pop in the oven.

To Store: You can store this blueberry bread pudding in a sealed, airtight container in the fridge for up to 3 days.  When ready to re-heat, either cover the entire dish with foil and heat in the oven at 350 degrees F for about 20 minutes or re-heat individual portions in the microwave or toaster oven until heated through.

To Freeze: This blueberry bread pudding can also be stored in the freezer for up to 3 months in a sealed, airtight container.  Alternatively, you can also slice the bread pudding into individual portions, wrap them in plastic wrap and store them in sealed freezer bags.

Optional Toppings

  • Drizzle on some cream cheese (highly recommend!), maple syrup, a lemon glaze or whipped cream
  • Sprinkle with some powdered sugar
  • Top with extra blueberries, chopped nuts or other fresh fruit
  • Add a scoop of vanilla ice cream and enjoy as a dessert!

Women’s World Cup team news as Sam Kerr on bench for last-16 clash

Australia will look to advance to the quarter-finals of the Women’s World Cup as they host Denmark at a sold-out Olympic Stadium in Sydney.

The World Cup co-hosts survived a “do or die” clash with Canada to progress to the knockout stages in style, thrashing the Olympic champions 4-0 to finish top of Group B.

The Matildas could be boosted by the return of star striker and captain Sam Kerr, who missed all three group games due to injury but could be back for the knockout stages.

Denmark are led by Kerr’s former Chelsea team-mate Pernille Harder and reached the last-16 after finishing runner-up to England in Group B.

The early exits of Germany, the USA and Brazil have opened up the World Cup and now Australia and Denmark have an opportunity to make a claim.

Denmark will make it their mission to ruin Australia’s party and kick-start their own celebrations by knocking the co-hosts out of the Women’s World Cup, but victory will not come easy against one of the favourites, coach Lars Sondergaard said on Sunday.

Speaking before Monday’s last-16 clash at Stadium Australia, Sondergaard said his team can take confidence from a 3-2 victory over the Matildas in 2021, adding that they had learnt a lot about their opponents in a 3-1 defeat last year.

“We’re going to have our own party if we succeed in ruining a party and that part is fine by me. Of course, it’s going to be a difficult game but we see chances,” Sondergaard told a press conference.

“We’re living a dream and we want to continue living it as long as possible, until the final day of the tournament.”

Sam Kerr remained on the bench but thankfully for Australia, they did not need her. In a must-win match, the co-hosts did much more to keep their World Cup alive: thrashing the Olympic champions Canada to reach the knockout stages and restoring belief that looked to have been lost in the shock defeat to Nigeria. With it, Group B was flipped on its head: Ireland’s draw with Nigeria means Australia advance as group winners, avoiding a potential clash with England in the last-16.

Kerr could yet return for that, but Australia finally found a way to play without their star striker and captain. It came at the perfect time with the Matildas facing elimination and a World Cup dream that was instead turning into a nightmare. Kerr was back on the bench after missing Australia’s opening two games with a calf injury, but against Canada they were instead lifted by another returning star in Mary Fowler.

Australia are embracing “do or die” attitude at World Cup, says Caitlin Foord.

“That (Canada) game was do or die for us and this is the exact same,” Foord said. “We’ll go in with the same mindset. We’re here to go all the way and that’s another hurdle tomorrow to get through to stay on the journey that we want to be on.

“We need to bring everything that we brought to the Canada game to put us in the best spot to get the result we need to move forward.”

Australia captain Sam Kerr has returned to training and expects to make her first Women’s World Cup appearance in Monday’s last 16 tie against Denmark, with coach Tony Gustavsson set to make a late call on whether she starts, and how many minutes she can play.

Kerr, Australia’s all-time leading scorer with 63 goals, injured her left calf on the eve of their World Cup opener against Ireland and sat out all three games in the group stage.

She told Australia’s Channel Nine on Saturday that she “will play” against Denmark, and although coach Gustavsson hinted the striker will play a part, he will leave it late to decide how much she will feature at Stadium Australia.

“We had a nice moment as a team yesterday, to see her back with her boots on and touching the ball and be with the team in training,” Gustavsson said. “It was a very good feeling for her, the players and me.

“She’s a player we’ll talk about tonight to see how many minutes would be suitable, and looking at 90 minutes and potentially extra time, how to get the best out of Sam Kerr in our game plan tomorrow.”
